Standing Rib Roast

Directions
- Put meat in a container with small holes and let dry in fridge for 3 days.
- Rub meat with salt and then oil.
- Set oven to 250°, cook meat until center reaches 118° (About 5 hours).
- Let meat sit until the temperature of the meat stops to rise.
- Set oven to 500°.
- Cook for an additional 10 mins.
- Remove ribs and extra fat.
