Standing Rib Roast

3 Day process. Feeds 10.

Directions

  1. Put meat in a container with small holes and let dry in fridge for 3 days.
  2. Rub meat with salt and then oil.
  3. Set oven to 250°, cook meat until center reaches 118° (About 5 hours).
  4. Let meat sit until the temperature of the meat stops to rise.
  5. Set oven to 500°.
  6. Cook for an additional 10 mins.
  7. Remove ribs and extra fat.
