Tenderloin Steaks

Ingredients

  • 2lb center-cut beef tenderloin roast
  • 1 TBSP canola oil
  • 1 TBSP butter
  • black pepper
  • salt

Directions

  1. Season tenderloin liberally on all sides with salt and pepper.
  2. Place on a wire rack set on a baking sheet.
  3. Cook at 275° until meat registers 100°.
  4. Slice meat into 2 inch steaks and season cut portions with salt and pepper.
  5. Heat the oil and butter in a 12" cast-iron skillet on high heat.
  6. Cook each side of the steaks for 1 min.
  7. Tent steaks with foil and let rest for 5 mins.
