Ingredients
- 2lb center-cut beef tenderloin roast
- 1 TBSP canola oil
- 1 TBSP butter
- black pepper
- salt
Directions
- Season tenderloin liberally on all sides with salt and pepper.
- Place on a wire rack set on a baking sheet.
- Cook at 275° until meat registers 100°.
- Slice meat into 2 inch steaks and season cut portions with salt and pepper.
- Heat the oil and butter in a 12" cast-iron skillet on high heat.
- Cook each side of the steaks for 1 min.
- Tent steaks with foil and let rest for 5 mins.
