Tandoori Chicken

2 day process.

Ingredients

  • 12 chicken thighs
  • 2 lemons
  • 3 limes
  • 1 TBSP minced peeled ginger root
  • 1 minced garlic
  • 2 tsp coriander
  • 2 tsp cumin
  • 2 tsp garam masala
  • 1 tsp cayenne pepper
  • 1 ½ tsp salt

Directions

  1. Cut large slits in chicken going against the grain.
  2. Dice ginger root and garlic with spices.
  3. Rub chicken with spices and squeeze lemon juice on top, put chicken in a small bowl.
  4. Marinate Chicken for 12 hours.
  5. Bake chicken with juice and all at 375° for 38 mins.
  6. Cut limes into fourths and serve with chicken.
