Tahini

Makes ½ cup. Keeps in fridge for 5 months

Ingredients

  • 2 garlic cloves
  • 1 TBSP fresh lemon juice
  • 1 TBSP balsamic vinegar
  • 4 TBSP olive oil
  • ¼ cup sesame seeds toasted
  • ⅛ tsp black pepper
  • ¼ tsp salt

Directions

  1. In a food processor pulse sesame seeds a few times.
  2. Add a pinch of salt and 1 TBSP olive oil slowly while processing for about 20 seconds.
  3. Cut garlic into small pieces and add to processor with vinegar, lemon juice, salt and pepper.
  4. Process for 30 seconds while slowly adding 3 TBSP olive oil.
