Sweet Potato Pesto
Works well with half a chicken breast and rigatoni
Ingredients
- 1 large sweet potato
- ¼ cup cashews
- ½ lime (juiced)
- 3 garlic gloves
- ¾ cup olive oil
- 1 TBSP bread crumbs
- 2 TBSP parmesan
- 3 sage leaves
- 1 tsp dried basil
- 1 tsp marjoram
Directions
- Cook the sweet potato at 450° for 20 mins.
- Cut the sweet potato into small pieces.
- Process all ingredients into a fine pesto.
