Sweet Potato Pesto

Works well with half a chicken breast and rigatoni

Ingredients

  • 1 large sweet potato
  • ¼ cup cashews
  • ½ lime (juiced)
  • 3 garlic gloves
  • ¾ cup olive oil
  • 1 TBSP bread crumbs
  • 2 TBSP parmesan
  • 3 sage leaves
  • 1 tsp dried basil
  • 1 tsp marjoram

Directions

  1. Cook the sweet potato at 450° for 20 mins.
  2. Cut the sweet potato into small pieces.
  3. Process all ingredients into a fine pesto.
