Ingredients
- 1 Cup green onions
- 2 medium yellow onions
- 2 garlic cloves
- 1 lb smoked sausage
- 1 TBSP olive oil
- 14 oz chicken broth
- 10 oz can mild Ro-Tel diced tomatoes with green chilies
- 1 cup monterey jack cheese
- 8 oz penne pasta
- 1 tsp salt
Directions
- Mince onions and garlic. Slice sausage.
- In an oven-safe skillet fry sausage and yellow onions with olive oil over medium heat for 4 minutes, stirring regularly.
- Add garlic and fry for 30 seconds.
- Add broth, Ro-Tel, uncooked pasta, salt and pepper and bring to a boil.
- Reduce heat to medium low and simmer for 15 mins.
- Remove from heat and stir in half of the cheese.
- Sprinkle remaining cheese and green onions on top and broil in the oven for 2 mins.
