Sausage Pata

Ingredients

  • 1 Cup green onions
  • 2 medium yellow onions
  • 2 garlic cloves
  • 1 lb smoked sausage
  • 1 TBSP olive oil
  • 14 oz chicken broth
  • 10 oz can mild Ro-Tel diced tomatoes with green chilies
  • 1 cup monterey jack cheese
  • 8 oz penne pasta
  • 1 tsp salt

Directions

  1. Mince onions and garlic. Slice sausage.
  2. In an oven-safe skillet fry sausage and yellow onions with olive oil over medium heat for 4 minutes, stirring regularly.
  3. Add garlic and fry for 30 seconds.
  4. Add broth, Ro-Tel, uncooked pasta, salt and pepper and bring to a boil.
  5. Reduce heat to medium low and simmer for 15 mins.
  6. Remove from heat and stir in half of the cheese.
  7. Sprinkle remaining cheese and green onions on top and broil in the oven for 2 mins.
