Pumpkin Brittle

Ingredients

  • 1 cup pepitas
  • 1 cup sugar
  • ½ cup brown sugar
  • 1 cup water
  • ⅓ cup light corn syrup
  • 2 TBSP butter
  • ½ tsp baking soda
  • 1 tsp vanilla extract

Directions

  1. Grease a large baking dish.
  2. Bring water, corn syrup, both sugars to a 260° boil in a pot while stirring.
  3. Remove pot from heat and stir in butter and pepitas.
  4. Return pot to heat and cook till 295° while stirring.
  5. Remove from heat and stir in the baking soda and vanilla.
  6. Immediately pour mixture into the baking dish, spread and let cool.
