Potato And Egg

Ingredients

  • 1 lb potatoes
  • 2 tsp fresh rosemary diced finely
  • 3 oz smoked bacon
  • 2 eggs
  • 3 TBSP olive oil
  • pinch of nutmeg
  • pinch of salt
  • pinch of pepper

Directions

  1. Coarsely grate potatoes and pat dry with a kitchen towel.
  2. Heat 2 TBSP oil in a wok and fry potatoes for 10 mins, transfer to paper towels.
  3. Chop bacon into small pieces and cook in wok till crisp.
  4. Combine bacon, potatoes, rosemary, and nutmeg, set aside.
  5. Using 1 TBSP oil fry eggs and place on top of potato composition.
