Ingredients
- 1 lb potatoes
- 2 tsp fresh rosemary diced finely
- 3 oz smoked bacon
- 2 eggs
- 3 TBSP olive oil
- pinch of nutmeg
- pinch of salt
- pinch of pepper
Directions
- Coarsely grate potatoes and pat dry with a kitchen towel.
- Heat 2 TBSP oil in a wok and fry potatoes for 10 mins, transfer to paper towels.
- Chop bacon into small pieces and cook in wok till crisp.
- Combine bacon, potatoes, rosemary, and nutmeg, set aside.
- Using 1 TBSP oil fry eggs and place on top of potato composition.
