Pineapple Sorbet

Ingredients

  • 4 cups pineapple
  • 1 lime
  • 2 cups sugar

Directions

  1. Process pineapple, 1 TBSP line juice and ¼ cup of water until smooth.
  2. Strain out pulp, refrigerate juice overnight.
  3. Boil 2 cups water with sugar with medium high heat stirring for 10 mins making simple syrup.
  4. Transfer simple syrup to an ice batch and stir until well chilled. Refrigerate until ready to use.
  5. Mix pineapple mixture and 2 W½ cup simple syrup in an ice cream maker for 12 mins, and let freeze overnight.
