Pancakes

Mix makes three batches, stores up to 3 months.

Ingredients

  • 6 cups all purpose flour
  • 2 TBSP sugar
  • 1 TBSP baking powder
  • 1 ½ tsp baking soda
  • 1 TBSP salt
  • 2 eggs (x3)
  • 2 cups buttermilk (x3)
  • 4 TBSP butter (x3)
  • 1 tsp vanilla extract (x3)

Directions

  1. To make mix; combine flour, sugar, baking power, baking soda, and salt in a container and shake.
  2. Whisk egg whites, vanilla extract and buttermilk together in a small bowl.
  3. Whisk egg yolks with melted butter.
  4. Pour all liquids rendered on top of 2 cups of mix, and whisk together.
  5. Keeping a griddle buttered cook at a tad below medium heat, flipping once one side has standing bubbles.
  6. Freeze leftovers by sandwiching them between towels for a couple hours then transfer to a freezer bag
