Omelet

Ingredients

  • 4 large eggs
  • 1 tbsp milk
  • 1 ½ TBSP butter (cut into small cubes)
  • 2 slices of ham (cut into small pieces)
  • 3 mushrooms (diced)
  • ½ a shallot (diced)
  • ½ tsp salt
  • ¾ tsp black pepper

Directions

  1. Whisk together 3 whole eggs, one egg yolk, milk, salt, and pepper.
  2. Let sit for at least 15 mins.
  3. Mix in the ham, mushrooms, shallot and ⅔rds of the butter.
  4. Melt the remaining butter in an 8" skillet over low heat.
  5. Add egg mixture and scrap slowly and constantly, occasionally lifting to allow liquids under solids.
  6. When egg mixture is firm, cover and remove from heat for 1 min.
  7. Flip the egg in half onto itself.
