Lemon Pound Cake

Ingredients

  • 2 lemons
  • 1 cup cake flour
  • ½ tsp baking powder
  • 1 stick butter
  • 2 eggs
  • 1 cup sugar
  • 1 ½ TBSP poppy seeds
  • ¼ tsp salt

Directions

  1. Make 3 tsp zest, 1 tsp juice, 2 TBSP juice, out of lemons.
  2. Heat oven to 325°.
  3. Whisk flour, baking powder, poppy seeds, and salt together in a small bowl.
  4. In med bowl, whisk ⅔ cup of sugar, melted butter, egg, lemon zest and 1 tsp lemon juice.
  5. Slowly mix in flour mixture until most of lumps are gone.
  6. Add to greased small loaf pan, cook for 35 mins.
  7. Let cake cool in pan for 10 mins.
  8. Combine ½ cup sugar and 2 TBSP lemon juice, microwave for 1 mins stirring at a mid point
  9. Brush top and sides of cake with this glaze.
