Ingredients
- 2 lemons
- 1 cup cake flour
- ½ tsp baking powder
- 1 stick butter
- 2 eggs
- 1 cup sugar
- 1 ½ TBSP poppy seeds
- ¼ tsp salt
Directions
- Make 3 tsp zest, 1 tsp juice, 2 TBSP juice, out of lemons.
- Heat oven to 325°.
- Whisk flour, baking powder, poppy seeds, and salt together in a small bowl.
- In med bowl, whisk ⅔ cup of sugar, melted butter, egg, lemon zest and 1 tsp lemon juice.
- Slowly mix in flour mixture until most of lumps are gone.
- Add to greased small loaf pan, cook for 35 mins.
- Let cake cool in pan for 10 mins.
- Combine ½ cup sugar and 2 TBSP lemon juice, microwave for 1 mins stirring at a mid point
- Brush top and sides of cake with this glaze.
