Garlic Potatoes

Ingredients

  • 2 medium sized potatoes
  • 1 garlic
  • 3 TB olive oil
  • ¼ tsp thyme
  • ⅛ tsp paprika
  • ½ tsp salt
  • ¼ tsp pepper

Directions

  1. Cut off top of garlic head exposing all gloves, brush with 1 TB oil and wrap in foil.
  2. Cook garlic at 350° for 50 mins.
  3. In a bowl add 1 TB oil, all spices, and cooked garlic and mash to a paste.
  4. Slice each potato into fourths and spread garlic paste all over them.
  5. Assemble potatoes back together, cover each in 2 tsp oil, sprinkle with salt and pepper.
  6. Wrap potatoes in foil and cook for 1 hour at 425°.
