Fauxgo Cheese Poofs

Ingredients

  • 1 cup tapioca flour
  • ½ cup whole milk
  • ⅓ cup butter
  • ½ tsp salt
  • 1 oz shredded parmesan or cotija cheese
  • 1 egg
  • ½ TBSP olive oil
  • 1 tsp sugar
  • butter cooking spray

Directions

  1. Combine butter, salt and milk in a sauce pan and bring to low boil.
  2. As soon as it boils transfer to a mixer and set on low.
  3. Slowly add flour, then cheese, eggs, sugar and oil.
  4. Mix on medium for 2 minutes.
  5. Spray down 1 mini muffing tins with cooking spray and spoon in batter.
  6. Bake for 20 mins on 350°.
