Curried Carrot Soup

Ingredients

  • 3 gloves garlic
  • 1 yellow onion
  • 2 cups carrots
  • 2 tsp olive oil
  • 4 ½ cups chicken broth
  • 1 tsp red curry paste
  • 1 cup coconut milk
  • ½ tsp salt
  • ½ tsp black pepper

Directions

  1. Dice the carrots, onion, and garlic.
  2. In a pot at medium low heat add oil, garlic, and onions cook for 5 mins.
  3. Add salt, pepper, curry paste, chopped carrots, and chicken broth.
  4. Bring to a boil, then reduce to a medium low heat and cook for 25 mins.
  5. Remove from the heat and add coconut milk and cool to room temperature.
  6. Puree the mixture in a pitcher until smooth.
  7. Heat up soup and serve.
