Ingredients
- 3 gloves garlic
- 1 yellow onion
- 2 cups carrots
- 2 tsp olive oil
- 4 ½ cups chicken broth
- 1 tsp red curry paste
- 1 cup coconut milk
- ½ tsp salt
- ½ tsp black pepper
Directions
- Dice the carrots, onion, and garlic.
- In a pot at medium low heat add oil, garlic, and onions cook for 5 mins.
- Add salt, pepper, curry paste, chopped carrots, and chicken broth.
- Bring to a boil, then reduce to a medium low heat and cook for 25 mins.
- Remove from the heat and add coconut milk and cool to room temperature.
- Puree the mixture in a pitcher until smooth.
- Heat up soup and serve.
