Ingredients
- 1 butternut squash
- 2 eggs
- 1 cup vegetable oil
- 2 cups sugar
- 3 cups flour
- ½ cup cashews
- 2 tsp vanilla extract
- 3 tsp baking powder
- 1 tsp cinnamon
- 1 tsp salt
Directions
- Grate squash down to 2 cups worth.
- Blend eggs while adding oil, sugar, squash and vanilla until smooth.
- Shift together the flour, baking powder, cinnamon and salt.
- Blend the flour mixture into the wet mixture.
- Chop nuts up and fold into mixture.
- Grease two 8.5 x 4.5" loaf pans and pour mixture evenly between the two.
- Bake at 325 ° for 55 minutes.
