Cinnamon Squash Bread

Ingredients

  • 1 butternut squash
  • 2 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 3 cups flour
  • ½ cup cashews
  • 2 tsp vanilla extract
  • 3 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp salt

Directions

  1. Grate squash down to 2 cups worth.
  2. Blend eggs while adding oil, sugar, squash and vanilla until smooth.
  3. Shift together the flour, baking powder, cinnamon and salt.
  4. Blend the flour mixture into the wet mixture.
  5. Chop nuts up and fold into mixture.
  6. Grease two 8.5 x 4.5" loaf pans and pour mixture evenly between the two.
  7. Bake at 325 ° for 55 minutes.
