Ingredients
- 4 carrots (peeled and sliced ½ inch thick)
- 2 parsnips (peeled and sliced ½ inch thick)
- 1 TBSP fresh parsley (minced)
- 1 TBSP vegetable oil
- ¼ tsp sugar
- ½ tsp salt
- salt
- pepper
Directions
- Whisk ¾ cups of warm water with the sugar and salt.
- Heat oil in a large skillet over medium heat until shimmering.
- Add carrots and sugar water, cover and stir occasionally for 8 mins.
- Uncover, add parsnips, and increase heat to high.
- Stir occasionally for 16 mins.
- Stir in parsley and season with salt and pepper.
