Carrots and Parsnips

Ingredients

  • 4 carrots (peeled and sliced ½ inch thick)
  • 2 parsnips (peeled and sliced ½ inch thick)
  • 1 TBSP fresh parsley (minced)
  • 1 TBSP vegetable oil
  • ¼ tsp sugar
  • ½ tsp salt
  • salt
  • pepper

Directions

  1. Whisk ¾ cups of warm water with the sugar and salt.
  2. Heat oil in a large skillet over medium heat until shimmering.
  3. Add carrots and sugar water, cover and stir occasionally for 8 mins.
  4. Uncover, add parsnips, and increase heat to high.
  5. Stir occasionally for 16 mins.
  6. Stir in parsley and season with salt and pepper.
