Breakfast Sausage
Ingredients
2 lbs pork butt
½ pound fat back
1 TBSP light brown sugar
1 ½ tsp ground sage leaves
2 tsp ground thyme leaves
½ tsp nutmeg
½ cayenne pepper
½ red pepper flakes
2 tsp salt
Directions
Dice pork and fat into small pieces.
Combine all ingredients and let chill for 1 hour.
Grind with a fine blade and form into 1 inch patties.
Cook patties for 7.5 mins each side on medium low heat.
